Recipe for Traditional Greek Galaktoboureko

Ingredients:

  • 1 package of phyllo dough (about 20 sheets)
  • 1 cup of granulated sugar
  • 1 liter of whole milk
  • 1 cup of semolina flour
  • 5 large eggs, beaten
  • 1 teaspoon of vanilla extract
  • 3/4 cup of unsalted butter, melted
  • 1/2 teaspoon of ground cinnamon (optional)

For the Syrup:

  • 1 cup of water
  • 1 cup of granulated sugar
  • 1/2 cup of honey
  • 1 cinnamon stick
  • Zest of 1 lemon

Instructions:

  1. Preheat the Oven and Prepare Pan: Heat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Brush a 9×13 inch baking pan with some of the melted butter.
  2. Make the Custard: In a large saucepan, bring the milk to a simmer over medium heat. Slowly whisk in the semolina flour until the mixture thickens. Remove from heat. Gradually add sugar and beaten eggs to the semolina mixture, stirring constantly. Mix in the vanilla extract. Set aside to cool slightly.
  3. Assemble the Galaktoboureko: Lay one sheet of phyllo dough in the prepared pan and brush it with melted butter. Repeat with half of the phyllo sheets, brushing each one with butter. Pour the semolina custard over the layered phyllo. Cover with the remaining phyllo sheets, brushing each with butter, including the top.
  4. Bake: Bake in the preheated oven for 40 to 45 minutes, or until the phyllo is golden and crisp.
  5. Prepare the Syrup: While the dessert bakes, combine water, sugar, honey, cinnamon stick, and lemon zest in a saucepan. Bring to a boil, then reduce to a simmer for about 10 minutes. Remove the cinnamon stick.
  6. Finish with Syrup: Pour the hot syrup over the hot Galaktoboureko as soon as it comes out of the oven. Allow it to soak in the syrup and cool for several hours before serving.
  7. Serve: Cut into squares and serve. Dust with ground cinnamon if desired.
